Ingredients
  

  • 2 C sweetpotatoes cooked and mashed
  • 3 eggs
  • C sugar
  • 1 pkg instant coconut pudding mix small package
  • 1 stick butter
  • ½ tsp. Applie Pie Spice
  • 2 premade pie crusts unbaked

Instructions
 

  • Mix together all ingreadients togher and pour into 2 regular unbaked pie crusts.
  • Bake at 350° degrees for 30 to 35 minutes.

For thicker pie

  • Pour all batter into 1 unbaked pie crust
  • Bake 350° for 55 to 60 minutes.

Notes

Nutritional values captured creating 1 thick pie.  This could be split into two pie crusts for a thinner pie.
