
Coconut Sweetpotato Pie

Ingredients
- 2 C sweetpotatoes cooked and mashed
- 3 eggs
- 1½ C sugar
- 1 pkg instant coconut pudding mix small package
- 1 stick butter
- ½ tsp. Applie Pie Spice
- 2 premade pie crusts unbaked
Instructions
- Mix together all ingreadients togher and pour into 2 regular unbaked pie crusts.
- Bake at 350° degrees for 30 to 35 minutes.
For thicker pie
- Pour all batter into 1 unbaked pie crust
- Bake 350° for 55 to 60 minutes.
Notes
Nutritional values captured creating 1 thick pie. This could be split into two pie crusts for a thinner pie.
