Sweetpotato Bourbon Spritz

You heard it here first: You MUST add sweetpotato simple syrup and bourbon to your summer spritz ingredient arsenal! This addition to bright, crisp, refreshing summer cocktails is going to be the secret sauce for adding a beautifully balanced hint of sweet, nutty, spiced flavor to the mix. Cooked sweetpotato cubes steep in a turbinado sugar syrup with cinnamon and star anise before being strained, and then adding the syrup to a gorgeous summer spritz made with bourbon, Aperol, and of course, tons of bubbles! Prosecco and club soda bring all the fizzy fun to the scene, before garnishing with a slice of orange and a sweet maraschino cherry.And don’t forget to hold onto those simmered sweetpotatoes for cooking later on. Add them to soups, salads, smoothies, oatmeals, or just snack on them all on their own. The steeped sweetpotatoes are also a brilliant addition if you’re preparing meals for your little ones. Ingredients
  

  • 2 ounces bourbon whiskey
  • 1 ounce Aperol
  • 1 tsp sweetpotato simple syrup plus more if desired (see method below)
  • ½ tsp fresh lemon juice
  • 4 ounces Prosecco
  • 1 can club soda
  • 1 maraschino cherry
  • Orange slice for garnish

For the Sweetpotato Simple Syrup

  • 1 sweetpotato peeled and cut into ½ inch pieces
  • 1 cup turbinado sugar
  • 1 tsp vanilla extract
  • 1 star anise
  • 2 cinnamon sticks

Instructions
 

Sweetpotato Simple Syrup

  • Add sweetpotato, 1 ¼ cups water, turbinado sugar, vanilla extract, star anise, and cinnamon sticks to a medium saucepan. Stir to combine. Bring to a boil over medium heat and then immediately reduce to a simmer. Stir frequently until sugar is dissolved and sweetpotato is fork tender, 10-12 minutes. Remove from heat and allow sweetpotato to steep in syrup for 1 hour.
  • Strain syrup through a mesh sieve. Save sweetpotato for later use (oatmeal, in a smoothie, or on toast). Transfer syrup to a jar or airtight container.

Sweetpotato Bourbon Spritz

  • In a wine glass, add bourbon, Aperol, sweetpotato simple syrup, and lemon juice over ice. Top with Prosecco and then club soda to fill glass. Add maraschino cherry. Garnish with orange slice. Serve chilled.
  • Store leftover sweetpotato simple syrup in a jar with cinnamon stick and store in the refrigerator for up to one month.
