This Farm Wife's Sweetpotato Pie

Ingredients

  • 2 cups medium sweetpotatoes
  • 3 cups sugar
  • 3 eggs
  • ¾ cup whole milk, canned evaporated milk (NOT sweetened condensed)
  • 1 tsp vanilla extract
  • pinch salt
  • pinch pumpkin pie spice
  • 1 stick butter
  • 2 deep dish pie crusts

Instructions

  • Pre-Heat oven to 350 degrees
  • Boil sweetpotatoes until fork tender
  • Cool, drain and peel sweetpotatoes
  • Mix all ingredients in stand mixer (or withhand-mixer)
  • Pour into unbaked pie crusts
  • Bake for 55-60 minutes until firm
  • Top with whipped cream and enjoy
