Ingredients
  

  • 1 medium sweet potato peeled
  • ½ cup peeled and diced zucchini
  • 1 frozen banana
  • ½ cup coconut yogurt
  • ½ cup unsweetened vanilla almond milk
  • 1 tsp maple syrup
  • ½ tsp fresh lemon juice
  • ½ tsp vanilla extract
  • 1 tsp cinnamon
  • tsp nutmeg
  • tsp ground cardamom
  • ½ tsp grated fresh ginger
  • Whipped coconut cream for topping (method below for homemade option)

Whipped Coconut Cream

  • 1 14.5-ounce can full fat coconut milk, refrigerated overnight
  • 1 teaspoon coconut sugar or cane sugar more if you prefer sweeter
  • ¼ teaspoon vanilla extract
  • Pinch kosher salt

Instructions
 

  • Poke sweet potato a few times with a fork. Place in microwave safe dish. Microwave 7 minutes, flipping halfway through.
  • While sweet potato cools, make Whipped Coconut Cream. Separate the hardened cream from the liquid in the can, adding hardened cream to a mixer with whisk attachment. Add sugar and vanilla extract. Blend on medium-high speed until whipped and smooth. Place aside in fridge until ready to use.
