Sweetpotato Mac & Cheese

Ingredients
- 3 1/2 cup whole milk
- 3 cups water
- 1 lb uncooked macaroni noodles (or other tube-shaped pasta)
- 4 ounces American cheese of choice (monterey jack can be used, but American gives a very creamy texture!)
- 1 1/2 cups grated sharp cheddar
- 1/2 cup mashed cooked sweetpotatoes
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp ground mustard
Instructions
- In a large pot, mix together milk, water, ground mustard, and pasta.
- Over medium heat, bring the pot to a low simmer and cook for 15-20 minutes, stirring frequently, until pasta is tender and milk is reduced from absorbing into the pasta.
- Turn heat to low and gently stir in the cheeses and sweetpotato until melted and creamy. Season with salt and pepper to taste and serve immediately.
