1lbuncooked macaroni noodles (or other tube-shaped pasta)
4ouncesAmerican cheese of choice (monterey jack can be used, but American gives a very creamy texture!)
1 1/2cupsgrated sharp cheddar
1/2cupmashed cooked sweetpotatoes
1/2tspsalt
1/2tspblack pepper
1/4tspground mustard
Instructions
In a large pot, mix together milk, water, ground mustard, and pasta.
Over medium heat, bring the pot to a low simmer and cook for 15-20 minutes, stirring frequently, until pasta is tender and milk is reduced from absorbing into the pasta.
Turn heat to low and gently stir in the cheeses and sweetpotato until melted and creamy. Season with salt and pepper to taste and serve immediately.
