Ingredients
- ¼ cup oats
- ¼ cup coconut milk
- ¼ cup water
- ¼ cup cooked sweetpotatoes diced
- ½ cup blueberries
Instructions
- Combine all ingredients in a microwave safe bowl.
- Microwave until oats are cooked and sweetpotatoes are hot, about 2-3 minutes depending on your microwave’s power
- Sprinkle on optional toppings and serve immediately
Notes
Cooking notes: Fresh, frozen or dried blueberries all work well.
