
Sweetpotato Breakfast Cookies

These soft + chewy Sweetpotato Breakfast Cookies are packed with goodness and kid-approved! Perfect to meal prep and pairs great with protein-rich sides for a balanced lunch.

Ingredients
- 2 cups old-fashioned rolled oats
- 1 cup almond flour
- 1 ½ tsp cinnamon
- 1 tsp baking powder
- ½ tsp sea salt
- ¼ tsp ground ginger
- 1 cup mashed baked @ncsweetpotatoes
- ⅓ cup maple syrup or honey
- ⅓ cup melted coconut oil
- 1 tsp vanilla
- ¼ cup chocolate chips
Instructions
- Preheat your oven to 350F.
- Take 1 cup of the oats and blend them in a blender or food processor until they turn into a flour-like texture.
- In a large mixing bowl, stir together the blended oats, the remaining whole oats, almond flour, cinnamon, baking powder, salt, and ginger.
- In the same bowl, add in wet ingredients and stir until everything is just combined. Fold in the chocolate chips.
- Scoop the dough onto a parchment-lined baking sheet. Shape each scoop into a round, slightly flattened cookie.
- Bake for 25–30 minutes, until the cookies are golden and set around the edges. Let them cool on the baking sheet for about 10 minutes before moving them to a wire rack to cool completely.
