Sweetpotato Breakfast Cookies

These soft + chewy Sweetpotato Breakfast Cookies are packed with goodness and kid-approved! Perfect to meal prep and pairs great with protein-rich sides for a balanced lunch.

- 2 cups old-fashioned rolled oats
- 1 cup almond flour
- 1 ½ tsp cinnamon
- 1 tsp baking powder
- ½ tsp sea salt
- ¼ tsp ground ginger
- 1 cup mashed baked @ncsweetpotatoes
- ⅓ cup maple syrup or honey
- ⅓ cup melted coconut oil
- 1 tsp vanilla
- ¼ cup chocolate chips
Preheat your oven to 350F.
Take 1 cup of the oats and blend them in a blender or food processor until they turn into a flour-like texture.
In a large mixing bowl, stir together the blended oats, the remaining whole oats, almond flour, cinnamon, baking powder, salt, and ginger.
In the same bowl, add in wet ingredients and stir until everything is just combined. Fold in the chocolate chips.
Scoop the dough onto a parchment-lined baking sheet. Shape each scoop into a round, slightly flattened cookie.
Bake for 25–30 minutes, until the cookies are golden and set around the edges. Let them cool on the baking sheet for about 10 minutes before moving them to a wire rack to cool completely.
