Sweetpotato Pecan Pie

Recipe
Ingredients
- 1 pie crust
- 2 sweetpotatoes Medium (approximately 1 lb.)
- ¼ cup butter
- 1 can sweetened condensed milk ( NOT evaporated milk)
- 1 tsp. grated orange rind
- 1 tsp. vanilla extract
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- ¼ tsp. salt
- 2 eggs
Pecan Topping
- 1 egg
- 3 tbsp. dark corn syrup
- 3 tbsp. light brown sugar firmly packed
- 1 tbsp. butter melted
- 1 tsp. maple flavoring
- 1 cup chopped pecans
Instructions
- Preheat oven to 350° F
- In a large mixing bowl, beat hot sweetpotatoes with butter until smooth.2 sweetpotatoes, ¼ cup butter
- Add the next ingredients and mix well.1 can sweetened condensed milk, 1 tsp. grated orange rind, 1 tsp. vanilla extract, 1 tsp. ground cinnamon, 1 tsp. ground nutmeg, ¼ tsp. salt, 2 eggs
- Pour into pie crust and bake for 30 minutes1 pie crust
- Remove from oven and spoon Pecan Topping evenly over the top.
- Bake an additional 20-25 minutes until golden brown
Pecan Topping
- In a small mixing bowl, combine the following:1 egg, 3 tbsp. dark corn syrup, 3 tbsp. light brown sugar, 1 tbsp. butter, 1 tsp. maple flavoring, 1 cup chopped pecans
