Sweetpotato Mango Sangria Popsicle

Ingredients
- ¼ c sweetpotatoes cooked, cooled and mashed
- ½ c mangos diced
- ½ c pears diced
- 1 c mango seltzer
- 1 Tbsp strawberries diced
Instructions
- COMBINE all ingredients in a blender, except diced strawberries.
- BLEND until icy consistency.
- POUR into popsicle molds. If desired, you can add reserved diced fruit (including strawberries) in the molds.
- FREEZE 2-3 hours or overnight until solid.
- SERVE as or in a glass of wine (rosé or sauvignon blanc) or your favorite juice/seltzer.
