- 1 cup sweetpotato
- 1/4 cup honey
- 2/3 cup coconut oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/3 cups all purpose flour
- 1 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
Greek yogurt frosting
- 1 cup greek yogurt
- ¼ cup honey
Instructions
- Preheat oven to 350°F. Line 12 cupcake molds with cupcake liners. Set aside.
- In a large bowl, mix the sweetpotato puree, honey, oil, eggs, and vanilla extract until well-combined.
- Add in the flour, baking powder, baking soda, cinnamon, and salt, mixing only until combined.
- Pour batter evenly into cupcake liners. Bake for 15 minutes.
- To make the frosting, mix the Greek yogurt and honey until well combined.
- Place 1-3 tablespoons of frosting over each cupcake.
