Ingredients
  

  • 1 cup sweetpotato
  • 1/4 cup honey
  • 2/3 cup coconut oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/3 cups all purpose flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt

Greek yogurt frosting

  • 1 cup greek yogurt
  • ¼ cup honey

Instructions
 

  • Preheat oven to 350°F. Line 12 cupcake molds with cupcake liners. Set aside. 
  • In a large bowl, mix the sweetpotato puree, honey, oil, eggs, and vanilla extract until well-combined. 
  • Add in the flour, baking powder, baking soda, cinnamon, and salt, mixing only until combined. 
  • Pour batter evenly into cupcake liners. Bake for 15 minutes. 
  • To make the frosting, mix the Greek yogurt and honey until well combined. 
  • Place 1-3 tablespoons of frosting over each cupcake.
