- 1 cup sweetpotato
- 1/4 cup honey
- 2/3 cup coconut oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/3 cups all purpose flour
- 1 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
Greek yogurt frosting
- 1 cup greek yogurt
- ¼ cup honey
Preheat oven to 350°F. Line 12 cupcake molds with cupcake liners. Set aside.
In a large bowl, mix the sweetpotato puree, honey, oil, eggs, and vanilla extract until well-combined.
Add in the flour, baking powder, baking soda, cinnamon, and salt, mixing only until combined.
Pour batter evenly into cupcake liners. Bake for 15 minutes.
To make the frosting, mix the Greek yogurt and honey until well combined.
Place 1-3 tablespoons of frosting over each cupcake.
