Sweetpotato Chocolate Pudding

Ingredients
- 1 cup cooked mashed sweetpotatoes
- 1/3 cup cocoa powder
- 1/3 cup maple syrup
- 1/2 cup coconut milk*
- 1/2 tsp cinnamon, optional
- Pinch of salt
Instructions
- Place all ingredients in a blender and blend until smooth and creamy.
- Refrigerate for at least 2 hours before serving.

Notes
*Use canned coconut milk. Only use the cream at the top of the can. Do not add the liquid at the bottom of the can.
For a richer chocolate flavor, add a little more cocoa powder
For more sweetness, add a little more maple syrup
