Sweetpotato Waldorf Salad

Ingredients

  • 3 Cups grated sweetpotatoes
  • 1/2 Cup raisins
  • 1 Cup chopped celery
  • 1/4 Cup chopped green onion
  • 5 oz. chopped baked ham
  • 1/2 Cup sour cream
  • 2 Tablespoons orange juice
  • Lettuce for garnish

Instructions

  • Bring grated sweetpotatoes to a boil in water
  • Cover and boil 1 minute only
  • Drain immediately
  • Place sweetpotatoes in ice water
  • Let stand for five minutes
  • Drain well and pat dry with paper towels
  • Combine sweetpotatoes, raisins, celery, and onion. Stir in ham
  • In a separate bowl, mix in sour cream and orange juice
  • Toss with sweetpotato mixture
  • Chill overnight & serve
