Cups
grated sweetpotatoes
1/2
Cup
raisins
1
Cup
chopped celery
1/4
Cup
chopped green onion

oz.
chopped baked ham
1/2
Cup
sour cream
2
Tablespoons
orange juice
Lettuce for garnish
Instructions
Bring grated sweetpotatoes to a boil in water
Cover and boil 1 minute only
Drain immediately
Place sweetpotatoes in ice water
Let stand for five minutes
Drain well and pat dry with paper towels
Combine sweetpotatoes, raisins, celery, and onion. Stir in ham
In a separate bowl, mix in sour cream and orange juice
Toss with sweetpotato mixture
Chill overnight & serve
