- 2 cups medium sweetpotatoes
- 3 cups sugar
- 3 eggs
- ¾ cup whole milk canned evaporated milk (NOT sweetened condensed)
- 1 tsp vanilla extract
- pinch salt
- pinch pumpkin pie spice
- 1 stick butter
- 2 deep dish pie crusts
Pre-Heat oven to 350 degrees
Boil sweetpotatoes until fork tender
Cool, drain and peel sweetpotatoes
Mix all ingredients in stand mixer (or withhand-mixer)
Pour into unbaked pie crusts
Bake for 55-60 minutes until firm
Top with whipped cream and enjoy
