Ingredients

Mole de Camote

  • 2 medium sweet potatoes
  • 1 medium yellow squash
  • 2 garlic cloves
  • 4 oz of silver almonds
  • 2 oz of roasted pepitas
  • 2 oz of sesame seeds
  • 2 oz of raisins
  • 2 oz of dry apricots
  • 1/2 Tbs of black pepper corns
  • 1 small red onion
  • 3 Chiles Guajillos
  • 3 Chiles de Arbol
  • 1 Jalapeno
  • 1/2 Tsp of cumin
  • 1 Tsp of ginger powder
  • 1 Tbs of salt
  • 3 Cups of Chicken Stock

Directions

  1. All ingredients get toasted in lard then blended together with the help of one cup of stock. The color of this sauce is bright orange and thick in nature.
  2. Once blended, add two cups stock and cook over medium heat for about 20 minutes
  3. This sauce is best use with pork, and served with white rice and pickled veggies.
