Mole de Camote

Recipe
Ingredients
- 2 medium sweetpotatoes
- 1 medium yellow squash
- 2 garlic cloves
- 4 oz of silver almonds
- 2 oz of roasted pepitas
- 2 oz of sesame seeds
- 2 oz of raisins
- 2 oz of dry apricots
- 1/2 Tbs of black peppercorns
- 1 small red onion
- 3 Chiles Guajillos
- 3 Chiles de Arbol
- 1 Jalapeno
- 1/2 Tsp of cumin
- 1 Tsp of ginger powder
- 1 Tbs of salt
- 3 Cups of Chicken Stock
Instructions
- All ingredients get toasted in lard then blended together with the help of one cup of stock. The color of this sauce is bright orange and thick in nature.
- Once blended, add two cups stock and cook over medium heat for about 20 minutes
- This sauce is best used with pork and served with white rice and pickled veggies.
