Mole de Camote

Ingredients

  • 2 medium sweetpotatoes
  • 1 medium yellow squash
  • 2 garlic cloves
  • 4 oz of silver almonds
  • 2 oz of roasted pepitas
  • 2 oz of sesame seeds
  • 2 oz of raisins
  • 2 oz of dry apricots
  • 1/2 Tbs of black peppercorns
  • 1 small red onion
  • 3 Chiles Guajillos
  • 3 Chiles de Arbol
  • 1 Jalapeno
  • 1/2 Tsp of cumin
  • 1 Tsp of ginger powder
  • 1 Tbs of salt
  • 3 Cups of Chicken Stock

Instructions

  • All ingredients get toasted in lard then blended together with the help of one cup of stock. The color of this sauce is bright orange and thick in nature.
  • Once blended, add two cups stock and cook over medium heat for about 20 minutes
  • This sauce is best used with pork and served with white rice and pickled veggies.
