Lemongrass Spiced Sweetpotato Noodle Bowl

This Lemongrass Spiced Sweetpotato Noodle Bowl is my twist on the classic bún thịt nướng - a vibrant Vietnamese dish with noodles, fresh herbs, and veggies! 🥕🥒 In this bowl, we incorporated sweetpotatoes to add a pop of bright color and plenty of nutrients.  🍠✨

Ingredients
  

Marinade:

  • 3 tbsp lemongrass turmeric paste
  • 3 garlic cloves minced
  • 2 tbsp fish sauce
  • tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp maple syrup or honey
  • 14 oz extra-firm tofu drained and cut into chunks
  • 3 medium North Carolina Sweetpotatoes cut into chunks

Bowl Ingredients: 

  • 8 oz rice noodles, preferably brown rice cooked and drained
  • 15 romaine lettuce leaves
  • cups bean sprouts
  • 1 red bell pepper sliced
  • 2 Persian cucumbers sliced
  • Garnish: lime wedges, fresh mint, sweet ginger chili sauce (optional, for topping)

Instructions
 

  • Mix all marinade ingredients together. Divide marinade evenly between tofu and sweetpotato chunks, mixing until well coated.
  • Working in batches, add marinated sweetpotatoes and tofu to an air fryer. Cook for 15-18 minutes, stirring and flipping halfway through, until soft when pricked with a fork and browned. 
  • To assemble the bowls, divide cooked sweetpotatoes, tofu, noodles, lettuce, bean sprouts, bell peppers, and cucumbers evenly between 4 serving bowls.
  • Garnish with lime wedges, cilantro, and chili sauce, if desired.
