
Lemongrass Spiced Sweetpotato Noodle Bowl

Sweetpotatoes bright hue comes from beta-carotene, which supports immune health, eye health, and glowing skin! ✨ Plus, they’re a complex carb that fuels you with steady, crash-free energy! 🍠
Recipe
Ingredients
Marinade:
- 3 tbsp lemongrass turmeric paste
- 3 garlic cloves minced
- 2 tbsp fish sauce
- 1½ tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp maple syrup or honey
- 14 oz extra-firm tofu drained and cut into chunks
- 3 medium North Carolina Sweetpotatoes cut into chunks
Bowl Ingredients:
- 8 oz rice noodles, preferably brown rice cooked and drained
- 15 romaine lettuce leaves
- 1½ cups bean sprouts
- 1 red bell pepper sliced
- 2 Persian cucumbers sliced
- Garnish: lime wedges, fresh mint, sweet ginger chili sauce (optional, for topping)
Instructions
- Mix all marinade ingredients together. Divide marinade evenly between tofu and sweetpotato chunks, mixing until well coated.
- Working in batches, add marinated sweetpotatoes and tofu to an air fryer. Cook for 15-18 minutes, stirring and flipping halfway through, until soft when pricked with a fork and browned.
- To assemble the bowls, divide cooked sweetpotatoes, tofu, noodles, lettuce, bean sprouts, bell peppers, and cucumbers evenly between 4 serving bowls.
- Garnish with lime wedges, cilantro, and chili sauce, if desired.
