Mix all marinade ingredients together. Divide marinade evenly between tofu and sweetpotato chunks, mixing until well coated.
Working in batches, add marinated sweetpotatoes and tofu to an air fryer. Cook for 15-18 minutes, stirring and flipping halfway through, until soft when pricked with a fork and browned.
To assemble the bowls, divide cooked sweetpotatoes, tofu, noodles, lettuce, bean sprouts, bell peppers, and cucumbers evenly between 4 serving bowls.
Garnish with lime wedges, cilantro, and chili sauce, if desired.
