
Build-Your-Own Brunch Board
The “girl dinner” is making its way into 2024, and this is a fun, simple, colorful, and healthy way to have friends over for a delicious make-it-yourself brunch meal. Baked sweetpotato slices are roasted into toasts, and then placed on a board with fixings like smoked salmon, capers, avocado, sliced tomato, onion, cucumber, Greek yogurt, fresh fruit, and more. Create your own gorgeous sweetpotato display and enjoy a delicious meal while you catch up with friends!
Recipe
Ingredients
- 2 large sweetpotatoes peeled and cut into 1/2-inch thick slices
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1/2 tsp black pepper freshly ground
- 1 cup Greek yogurt
- 1 tsp everything bagel seasoning
- 1/2 cup capers divided
- 2 tsp chives chopped
- 8-10 large iceberg lettuce leaves
- 1 lb smoked salmon
- 1/2 medium red onion very thinly sliced
- 1/2 medium cucumber thinly sliced
- 3 medium heirloom tomatoes sliced
- 12 oz bacon
- 1 medium ripe avocado pitted and sliced
- 1 cup strawberries
- 1/2 cup blueberries
- 1/2 cup raspberries
Instructions
- Preheat oven to 375 F degrees. Assemble sweetpotato slices on a parchment lined sheet pan. Brush both sides with olive oil. Season with salt and pepper. Roast 30 minutes, flipping slices halfway through.
- Divide Greek yogurt into 3 small bowls. Divide everything bagel seasoning, 2 teaspoons capers, and chives between each, and mix to combine three different spreads. Place remaining capers in a small bowl. Place a small serving spoon in each.
- Assemble the brunch board in sections: lettuce, sweetpotato toasts, smoked salmon, red onion, cucumber, tomato, bacon, and avocado. Create section for strawberries, blueberries, raspberries, or serve berries in a bowl on the side.
- Serve sweetpotato brunch board immediately, or prepare, cover, and refrigerate up to one day in advance, with small serving plates for sharing. If you prepare this board ahead of time, add the avocado when ready to serve.
