
Smoked Salmon on Homemade Sweetpotato Bagels

This recipe takes everything you love about a bagel sandwich and levels it up into a nourishing everyday meal. You’ll whip up easy homemade bagels using sweetpotato, Greek yogurt, and self-rising flour, for a quick recipe that requires no yeast and no water bath. Once the bagels are done, pile on all the delicious toppings – smoked salmon, cucumber, greens, and chive cream cheese. It’s a great option for Mother’s Day; in fact, the kiddos can help make the bagels. Also perfect for a family brunch or just whipping up regularly for a fueling and delicious breakfast.

Ingredients
For the Bagels:
- 1 medium North Carolina sweetpotato
- ¾ cup plain nonfat Greek yogurt
- 1 cup self-rising flour
- 1 large egg optional for egg wash
- 1 tbsp water optional for egg wash
- 1 ½ tsp everything bagel seasoning
For the Sandwiches:
- 5 oz whipped cream cheese
- 1 tbsp chopped chives
- 1 cup mixed greens
- ½ cucumber peeled and sliced thinly
- 6 oz smoked salmon
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Place the sweetpotato on a microwave safe plate. Poke with a fork a few times and cover with a damp paper towel. Microwave for 4 ½ to 5 minutes, or until tender throughout. Let cool for a few minutes.
- Scrape the sweetpotato flesh into a mixing bowl, discarding the skin. Mash the sweetpotato well with the back of a fork.
- Add the yogurt to the bowl and stir well, then add the flour and stir until it forms a shaggy dough.
- Use your hands to knead the dough for a minute in the bowl, incorporating the ingredients into a large ball. Split into four equal portions.
- Roll each portion of dough in your hands in a ball, then poke a hole in the center to form a bagel shape. Repeat and place all four on a parchment-lined baking sheet.
- In a small bowl, whisk together the egg and water. Use a pastry brush to brush a thin layer of the egg wash onto each bagel. Sprinkle with the everything bagel seasoning.
- Bake at 350 degrees F for 20-25 minutes, until golden on top and cooked throughout. Let cool on the pan for 10 minutes.
- Meanwhile, stir together the cream cheese and chives.
- Slice the bagels. Spread chive cream cheese on one half, then top with mixed greens, cucumber slices, and smoked salmon. Place the other half of the bagel on top and enjoy!
Notes
Self-rising flour already contains salt and a leavening agent. If you only have all-purpose flour, you can use this, but you must add ¼ teaspoon salt and 1 ½ teaspoons baking powder.
If the dough seems too moist, add an extra tablespoon of flour at a time until it is not overly sticky. This can sometimes happen if your sweetpotato is larger.
These bagels are a bit smaller than the bakery-style options you might find at a grocery store. As such, you’ll use a little less cream cheese and smoked salmon compared to making this on large bagels. Feel free to slightly adjust amounts though based on your own preferences.
Store leftover bagels at room temperature for same-day use, in the fridge for up to 4 days, or freeze for up to 3 months. Store other leftover bagel ingredients (greens, salmon, etc.) in the fridge according to package directions.
