
Taco Roasted Sweetpotatoes Recipe

Ingredients
- 4 sweetpotatoes
- 2 tbsp olive oil
- Sea Salt
olive oil mixture:
- 3 tbsp olive oil
- 1 tbsp taco seasoning
- 1 tsp maple syrup
Instructions
- Preheat oven to 425°F. Prepare olive oil mixture by blending 3 tbsp olive oil, 1 tbsp taco seasoning and 1 tsp maple syrup and set aside for later. Wash and slice sweetpotatoes in half lengthwise. Lay sweetpotato halves flat, cut-side down on a foil-lined baking sheet. Brush with 2 tbsp olive oil and sprinkle a pinch of sea salt evenly on top. Bake for 30 minutes. Remove from oven and brush with the taco seasoned olive oil mixture. Return to oven for 15-20 minutes until the glaze looks golden. Cool and enjoy with your favorite diy toppings such as ground beef, cheese and sour cream.
