Sweetpotato White Bean Burger

Recipe
Ingredients
- ½ Cup celery diced
- ½ Cup bell pepper diced
- ¼ Cup green onions sliced
- 15.5 oz. white beans drained, rinsed, and smashed
- 1 egg
- ½ Cup parmesan cheese grated
- ¼ Cup oats
- 1 Cup sweetpotatoes shredded
- ¼ Cup all-purpose flour
- ½ Cup Panko
Instructions
- Mix together all ingredients except for the panko in a mixing bowl until well combined
- Form 12 burgers from the mix and gently coat in the panko
- Bake or pan fry the burgers until they’re golden brown on both sides. Serve immediately
Notes
Cooking notes:
Feel free to use any plain canned beans you have in the pantry.
Use any flour that fits your food allergy and/or dietary needs. Same with the panko.
