Sweetpotato White Bean Burger

Ingredients

  • ½ Cup celery diced
  • ½ Cup bell pepper diced
  • ¼ Cup green onions sliced
  • 15.5 oz. white beans drained, rinsed, and smashed
  • 1 egg
  • ½ Cup parmesan cheese grated
  • ¼ Cup oats
  • 1 Cup sweetpotatoes shredded
  • ¼ Cup all-purpose flour
  • ½ Cup Panko

Instructions

  • Mix together all ingredients except for the panko in a mixing bowl until well combined
  • Form 12 burgers from the mix and gently coat in the panko
  • Bake or pan fry the burgers until they’re golden brown on both sides. Serve immediately

Notes

Cooking notes:
Feel free to use any plain canned beans you have in the pantry.
Use any flour that fits your food allergy and/or dietary needs. Same with the panko.
