Sweetpotato White Bean Burger

- ½ Cup celery diced
- ½ Cup bell pepper diced
- ¼ Cup green onions sliced
- 15.5 oz. white beans drained, rinsed, and smashed
- 1 egg
- ½ Cup parmesan cheese grated
- ¼ Cup oats
- 1 Cup sweetpotatoes shredded
- ¼ Cup all-purpose flour
- ½ Cup Panko
Mix together all ingredients except for the panko in a mixing bowl until well combined
Form 12 burgers from the mix and gently coat in the panko
Bake or pan fry the burgers until they’re golden brown on both sides. Serve immediately
Cooking notes:
Feel free to use any plain canned beans you have in the pantry.
Use any flour that fits your food allergy and/or dietary needs. Same with the panko.
