Did you know that you can make 2 ingredient tortillas using just sweetpotatoes and flour? Sweetpotatoes are a versatile veggie and easy to add to a variety of recipes to enhance flavor and nutrition content. They are packed with vitamins, minerals, antioxidants and fiber and when stored properly in a cool, dry, well-ventilated area, can last up to 4 weeks.
This makes about 6 tacos. These sweetpotato tortilla chicken tacos are balanced with fiber-rich carbohydrates, lean protein and good fats.

Ingredients
  

  • 1 large NC sweetpotatoes
  • 1 cup all-purpose flour or cassava flour
  • 8 oz. rotisserie chicken shredded
  • 1/2 cup pico de gallo
  • 1 medium avocado sliced
  • Optional for topping: cilantro lime juice

Instructions
 

  • Peel and chop our sweetpotato.
  • Bring a medium pot of water to a boil. Add the chopped sweetpotatoes and cook until tender, about 10-15 minutes.
  • In a large bowl, mash the sweetpotatoes and combine with the flour. The dough should not be too sticky.
  • Use your hands to form the dough into a ball and divide into 6 equal portions. Dust your working surface with flour and use a rolling pin to roll out the dough into tortillas.
  • Preheat a medium non-stick skillet over medium-high heat (spray with oil if not nonstick), place the tortilla in the skillet and cook for 1-2 minutes on both sides.
