Sweetpotato Tortillas

Soft, flavorful, and slightly sweet, these homemade tortillas are made with a simple mix of mashed sweetpotatoes, flour, and salt. The dough is kneaded until smooth, rolled into thin rounds, and cooked on a hot skillet until golden brown and pliable. Perfect for tacos, wraps, or as a wholesome side, these tortillas stay warm and tender when stacked in a kitchen towel—ready to enjoy with your favorite fillings.

Ingredients
  

  • 2 cups cooked sweetpotatoes mashed smooth
  • 4 cups all-purpose flour plus more for dusting
  • 2 teaspoons salt

Instructions
 

  • In a large mixing bowl, combine the mashed sweetpotatoes, flour, and salt.
  • Knead until the dough is smooth and firm. If sticky, add a little more flour.
  • Divide the dough into 8–10 equal balls (about golf ball size).
  • On a lightly floured surface, roll each ball into a thin, round tortilla.
  • Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 2 minutes per side, until lightly browned and cooked through.
  • Stack tortillas in a clean kitchen towel to keep them warm and pliable until ready to serve.
