The dough is kneaded until smooth, rolled into thin rounds, and cooked on a hot skillet until golden brown and pliable. Ingredients
- 2 cups cooked sweetpotatoes mashed smooth
- 4 cups all-purpose flour plus more for dusting
- 2 teaspoons salt
Instructions
- In a large mixing bowl, combine the mashed sweetpotatoes, flour, and salt.
- Knead until the dough is smooth and firm. If sticky, add a little more flour.
- Divide the dough into 8–10 equal balls (about golf ball size).
- On a lightly floured surface, roll each ball into a thin, round tortilla.
- Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 2 minutes per side, until lightly browned and cooked through.
- Stack tortillas in a clean kitchen towel to keep them warm and pliable until ready to serve.
