Sweetpotato Sausage Bake

Recipe
Ingredients
- 1 lb ground pork
- 1 tsp paprika
- 1 tsp dried Italian herbs
- ¼ tsp red chili flakes
- ½ tsp black pepper
- 3 Cups leftover stuffing
- 1 Cup shredded cheese
- 2 Cups sweetpotatoes shredded
Instructions
- Mix together all spices with the ground pork until spices are evenly distributed
- Add in the shredded cheese and mix again
- Add in the stuffing and mix for a final time before placing mixture into a 13x9 inch baking dish
- Bake at 350℉ until the internal temperature reaches 160℉. Serve immediately or at room temperature
Notes
Cooking notes:
- Ground pork, turkey or even chicken sausage all work well in this recipe. You can even use a premixed breakfast sausage or even chorizo.
- Use whichever shredded cheese you like.
- Bump up the fiber content by serving with a mixed green salad or side of veggies
