Sweetpotato Sausage Bake

Ingredients
  

  • 1 lb ground pork
  • 1 tsp paprika
  • 1 tsp dried Italian herbs
  • ¼ tsp red chili flakes
  • ½ tsp black pepper
  • 3 Cups leftover stuffing
  • 1 Cup shredded cheese
  • 2 Cups sweetpotatoes shredded

Instructions
 

  • Mix together all spices with the ground pork until spices are evenly distributed
  • Add in the shredded cheese and mix again
  • Add in the stuffing and mix for a final time before placing mixture into a 13x9 inch baking dish
  • Bake at 350℉ until the internal temperature reaches 160℉. Serve immediately or at room temperature

Notes

Cooking notes:
  • Ground pork, turkey or even chicken sausage all work well in this recipe. You can even use a premixed breakfast sausage or even chorizo.
  • Use whichever shredded cheese you like.
  • Bump up the fiber content by serving with a mixed green salad or side of veggies
