Sweetpotato Sausage Bake

- 1 lb ground pork
- 1 tsp paprika
- 1 tsp dried Italian herbs
- ¼ tsp red chili flakes
- ½ tsp black pepper
- 3 Cups leftover stuffing
- 1 Cup shredded cheese
- 2 Cups sweetpotatoes shredded
Mix together all spices with the ground pork until spices are evenly distributed
Add in the shredded cheese and mix again
Add in the stuffing and mix for a final time before placing mixture into a 13x9 inch baking dish
Bake at 350℉ until the internal temperature reaches 160℉. Serve immediately or at room temperature
Cooking notes:
- Ground pork, turkey or even chicken sausage all work well in this recipe. You can even use a premixed breakfast sausage or even chorizo.
- Use whichever shredded cheese you like.
- Bump up the fiber content by serving with a mixed green salad or side of veggies
