Ingredients
- 2 medium sweetpotatoes chopped
- 2½ tbsp taco seasoning divided
- 1 lb ground grass-fed beef
- ½ cup pico de gallo
- ½ cup cooked corn
- ½ cup shredded cheese
- 2 cups romaine lettuce chopped
- 1 can black beans rinsed
For the dressing:
- ¼ cup pico de gallo
- 3 tbsp sour cream
- ½ tsp taco seasoning
Instructions
- Preheat the oven to 400°F.
- Toss the sweetpotatoes with olive oil and 1 tbsp taco seasoning. Spread in an even layer on a baking sheet and bake for 20-25 minutes, tossing halfway.
- Brown the beef in a skillet with 1 ½ tbsp taco seasoning.
- In a medium glass, whisk together the salad dressing ingredients.
- Assemble three meal prep jars with dressing at the bottom, followed by black beans, corn, pico de gallo, the cooked beef, cheese, sweetpotato, and romaine.
- Dump out onto a plate when you are ready to enjoy.
