- 1 tbsp extra virgin olive oil
- 1 large sweet onion thinly sliced
- 1 large North Carolina Sweetpotato grated
- ¼ tsp salt
- ½ cup slivered almonds
- ½ cup raisins
- ¼ cup barberries rinsed and drained
- 4 cups brown basmati rice cooked

Directions
- In a large skillet over medium heat, add olive oil and onion. Saute for about 8 minutes, until onion begins to soften and caramelize.
- Add sweetpotato and salt, and cook for 5-7 minutes. Stirring frequently.
- Stir in almonds, raisins and barberries, cook for another 4-5 minutes until almonds are lightly toasted.
- Serve on top of basmati rice.
