  • 1 tbsp extra virgin olive oil
  • 1 large sweet onion thinly sliced
  • 1 large North Carolina Sweetpotato grated
  • ¼ tsp salt
  • ½ cup slivered almonds
  • ½ cup raisins
  • ¼ cup barberries rinsed and drained
  • 4 cups brown basmati rice cooked

Directions

  • In a large skillet over medium heat, add olive oil and onion. Saute for about 8 minutes, until onion begins to soften and caramelize.
  • Add sweetpotato and salt, and cook for 5-7 minutes. Stirring frequently.
  • Stir in almonds, raisins and barberries, cook for another 4-5 minutes until almonds are lightly toasted.
  • Serve on top of basmati rice.
