Sweetpotato Casserole

Ingredients
  

  • 4 large sweetpotatoes Cook until soft.
  • ½ cup granulated sugar
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • ½ cup unsalted melted butter
  • ¼ cup cinnamon
  • 1 Tbs nutmeg

Topping

  • 1 cup light brown sugar
  • ½ cup all-purpose flour
  • 1 cup chopped pecans
  • ½ cup melted butter

Instructions
 

Preparation

  • Combine sweet potatoes, granulated sugar, salt, vanilla extract, eggs, unsalted melted butter, cinnamon, and nutmeg in a bowl until smooth.
  • Pour into 2 quart baking pan.

Topping

  • Combine brown sugar with flour, chopped pecans, and melted butter and stir together.

Baking

  • Preheat oven to 375° Fahrenheit.
  • Bake sweetpotato at 375° Fahrenheit for 25-30 minutes.
  • Remove from oven and put on topping and bake for 10-15 minutes more.
