Recipe courtesy of Christine Fiorentino, creator of Three Birds One StoveYou heard it here first: You MUST add sweetpotato simple syrup and bourbon to your summer spritz ingredient arsenal! This addition to bright, crisp, refreshing summer cocktails is going to be the secret sauce for adding a beautifully balanced hint of sweet, nutty, spiced flavor to the mix. Cooked sweetpotato cubes steep in a turbinado sugar syrup with cinnamon and star anise before being strained, and then adding the syrup to a gorgeous summer spritz made with bourbon, Aperol, and of course, tons of bubbles! Prosecco and club soda bring all the fizzy fun to the scene, before garnishing with a slice of orange and a sweet maraschino cherry. And don’t forget to hold onto those simmered sweetpotatoes for cooking later on. Add them to soups, salads, smoothies, oatmeals, or just snack on them all on their own. The steeped sweetpotatoes are also a brilliant addition if you’re preparing meals for your little ones. My daughter devoured a few forkfuls of these and really enjoyed the extra hint of sweetness and cinnamon flavor the sweetpotato absorbed by steeping in the syrup.Cheers to the summer of this crisp, bright, refreshing, and delicious Sweetpotato Bourbon Spritz!
