Sweetpotato Banana Muffins

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1/2 cup vegetable oil
  • 3 ripe bananas, peeled
  • 1/2 tsp vanilla extract
  • 3/4 cup sugar
  • 2 large eggs
  • 1 cup mashed sweetpotato

Instructions
 

  • Pre-heat the oven to 350°F and spray a 12 muffin pan with non-stick baking spray.
  • In a large bowl sift together flour, salt, baking soda, baking powder, cinnamon, and set aside. Mix in wet ingredients oil, bananas, vanilla, sugar, sweetpotato, and eggs. Mix till smooth. Slowly add in sifted ingredient mixture.
  • Pour batter into muffin tins so they are about ¾ full. Bake for 20 minutes. Test muffins by inserting a toothpick into the center. The toothpick should have a few light crumbs when removed.
