Savory sweetpotato pancakes made from mashed North Carolina sweetpotatoes, eggs, cheddar, scallions, and almond flour—pan-seared until crisp outside and tender inside. Fiber-rich and loaded with beta-carotene, they’re a satisfying, two-serving base for toppings like Greek yogurt, smashed avocado, or a drizzle of hot honey.

  • 2 medium sweetpotatoes peeled, cooked and mashed
  • 2 eggs
  • 1/4 cup shredded cheddar
  • 1/4 cup chopped green onion
  • 1/4 cup blanched almond flour

  • Peel the sweetpotatoes and cut them into chunks. Boil or steam until fork-tender, about 10-15 minutes. Drain and mash until smooth.
  • In a mixing bowl, combine the mashed sweetpotatoes, eggs, shredded cheddar, chopped green onion, and almond flour. Mix until well combined.
  • Heat a nonstick skillet over medium heat and lightly grease it with oil or butter.
  • Scoop about ¼ cup of the mixture into the skillet, flattening it slightly to form a pancake shape.
  • Cook for 2-3 minutes per side, or until golden brown and firm enough to flip. Repeat with the remaining batter.
  • Serve warm with a dollop of Greek yogurt, a sprinkle of extra green onions, or your favorite dipping sauce.
