- 2 medium sweetpotatoes peeled, cooked and mashed
- 2 eggs
- 1/4 cup shredded cheddar
- 1/4 cup chopped green onion
- 1/4 cup blanched almond flour
Instructions
- Instructions:
- Peel the sweetpotatoes and cut them into chunks. Boil or steam until fork-tender, about 10-15 minutes. Drain and mash until smooth.
- In a mixing bowl, combine the mashed sweetpotatoes, eggs, shredded cheddar, chopped green onion, and almond flour. Mix until well combined.
- Heat a nonstick skillet over medium heat and lightly grease it with oil or butter.
- Scoop about ¼ cup of the mixture into the skillet, flattening it slightly to form a pancake shape.
- Cook for 2-3 minutes per side, or until golden brown and firm enough to flip. Repeat with the remaining batter.
- Serve warm with a dollop of Greek yogurt, a sprinkle of extra green onions, or your favorite dipping sauce.
