Piña Colada Sweetpotato Popsicles
Created for the North Carolina SweetPotato Commission by: Bucket List Tummy, Sarah Schlichter MPH, RDNCool off this summer with this healthy option, using you guessed it, sweetpotatoes!
Recipe
Ingredients
- ½ cup coconut cream
- ¾ cup sweetpotato cooked and mashed
- ¾ cup pineapple diced
- 2 Tbsp honey
- 1 Tbsp lime juice
- coconut flakes optional
Instructions
- In food processor or high-speed blender, mix coconut cream, sweetpotato, pineapple, honey and lime juice. Transfer batter to freezer molds.
- Place in freezer 3-4 hours. Top with coconut flakes, if desired.
