
Parmesan Crusted Sweetpotatoes
Recipe Developed by Ayat Sleymann, MS, RDN This easy snack is a well-balanced option, packed with antioxidants and fiber from sweetpotatoes and a boost of protein from Parmesan cheese. It’s a hit with the kids and makes the perfect after-school treat!

Ingredients
- 1-2 large NC sweetpotatoes cut lengthwise
- 2 tbsp olive oil
- 1 tablespoon Italian seasoning
- 1 garlic clove grated
- 1/2 cup shredded parmesan cheese
Instructions
- Preheat your oven to 400F and line a baking sheet with parchment paper.
- Slice your North Carolina sweetpotatoes lengthwise and place in a bowl with the olive oil, Italian seasoning and garlic. Mix well until the sweetpotatoes are well coated. Sprinkle shredded parmesan cheese onto your baking sheet and spread so it’s evenly coated. Place sweetpotatoes cut-side down on top of the parmesan, bake for 30-40 minutes until sweetpotatoes are tender and the bottom layer of cheese is crispy and deeply browned. Remove, let cool and serve topped with herbs, like parsley!
