Ingredients
  

  • 4 sweet potatoes
  • 1 rotisserie chicken shredded
  • buffalo sauce
  • 1 avocado diced
  • 2 tbsp diced chives

Instructions
 

  • Bake the sweetpotatoes: Preheat oven to 400°F. Place sweetpotatoes on a lined baking sheet and pierce each a few times with a fork. Bake for 45 minutes, or until tender. 
  • Prepare the sweetpotatoes: Let cool slightly. Cut each potato lengthwise, then crosswise, gently opening it up. Use a fork to lightly mash the inside. 
  • Mix the filling: In a large bowl, combine the shredded rotisserie chicken with the buffalo sauce until evenly coated. 
  • Stuff & top: Spoon the buffalo chicken mixture into each sweetpotato. Top with diced avocado and chives. 
  • Serve warm and enjoy.
