Ingredients
- 4 sweet potatoes
- 1 rotisserie chicken shredded
- 1½ buffalo sauce
- 1 avocado diced
- 2 tbsp diced chives
Instructions
- Bake the sweetpotatoes: Preheat oven to 400°F. Place sweetpotatoes on a lined baking sheet and pierce each a few times with a fork. Bake for 45 minutes, or until tender.
- Prepare the sweetpotatoes: Let cool slightly. Cut each potato lengthwise, then crosswise, gently opening it up. Use a fork to lightly mash the inside.
- Mix the filling: In a large bowl, combine the shredded rotisserie chicken with the buffalo sauce until evenly coated.
- Stuff & top: Spoon the buffalo chicken mixture into each sweetpotato. Top with diced avocado and chives.
- Serve warm and enjoy.
