
BBQ Chicken and Sweetpotato Quesadilla

Ingredients
- 2 6 inch flour tortillas
- ½ cup shredded chicken
- ⅓ cup roasted NC sweetpotatoes
- 2 tbsp black beans
- 2 tbsp pineapple tidbits
- ⅓ cup shredded monterey jack cheese
- 1 tbsp BBQ sauce
Instructions
- Heat pan to medium-low heat. Place the tortilla in the pan.
- Add chicken, bbq sauce, sweetpotatoes, black beans, and pineapple.
- Sprinkle with cheese and top with remaining tortilla.
- Cook for 4-5 minutes. The bottom of the tortilla should be toasted. Flip and cook for an additional 4 minutes.
- Remove from heat and cut into quarters.
