BBQ Chicken and Sweetpotato Quesadilla

BBQ Chicken and Sweetpotato Quesadilla layers shredded chicken, roasted sweetpotatoes, black beans, pineapple, and Monterey Jack cheese between crispy tortillas. Finished with a drizzle of BBQ sauce, this quick and flavorful quesadilla is perfect for an easy lunch.

Ingredients

  • 2 6 inch flour tortillas
  • ½ cup shredded chicken
  • cup roasted NC sweetpotatoes
  • 2 tbsp black beans
  • 2 tbsp pineapple tidbits
  • cup shredded monterey jack cheese
  • 1 tbsp BBQ sauce

Instructions

  • Heat pan to medium-low heat. Place the tortilla in the pan.
  • Add chicken, bbq sauce, sweetpotatoes, black beans, and pineapple.
  • Sprinkle with cheese and top with remaining tortilla.
  • Cook for 4-5 minutes. The bottom of the tortilla should be toasted. Flip and cook for an additional 4 minutes.
  • Remove from heat and cut into quarters.
