Sweet n’ Healthy Winners!

We have officially found the three BEST sweet potato recipes ever! Well, three pretty darn good ones. All of our contestants did a great job. The entries were beautiful, healthy, delicious, and I must add, a lot of fun to taste! Thank you for all your entries – we know you put in some hard work, and we definitely appreciate all the new, creative ideas. Without further adieu, here are our winners in each category:

 

 

Kid Friendly

 

 

We loved these tacos’ killer spicy/sweet flavor combination. I’ve eaten the leftovers for two meals since the judging – what a job perk! The foil packets are so easy for kids helping out in the kitchen (and for clean up!)

 

 

This healthy alternative to the average cheese crackers is brilliant! The soft crunch and salty, cheesy flavor is a yummy snack for kids, and grown ups. You would never know they’re actually good for you!

 

 

Sugar-Free

 

 

These scones are the new breakfast of champions. Soft on the inside, crunchy on the outside, the spicy clove/cinnamon/nutmeg, combined with the sweet potatoes and dates makes for a complex, yet subtle flavor. Yum!

 

The delicate phyllo wrapped around the crunchy, chewy sweet potato, raisins and walnuts is delightful. The rum adds a deep flavor that makes me go back for seconds (and thirds!)

 

Vegetarian

 

 

Oh, this linguine! Who knew you could make pasta out of sweet potato strips? This pasta is tender and rich, and makes for a perfect family meal. Some of the judges said “I could give this to my kids and they’d love it just like pasta!” For sneaky moms ;)

 

 

A spring treat that is complex in flavor, easy in preparation. Spicy, sweet, crunchy, soft – everything we love about a good sweet potato recipe. Not to mention, it’s only $5.96 to make! I’m ready for a picnic!
