- 2 medium @ncsweetpotatoes
- ½ cup oat flour
- ½ cup pizza sauce
- 1/3 cup shredded cheese
- ¼ cup mini pepperoni
- Optional: other toppings of choice such as basil olives, grated parm
Instructions
- What to do:
- Bake the Sweetpotatoes: Preheat the oven to 400 F. Pierce the sweetpotatoes with a fork and bake them whole for 40–50 minutes, or until soft. Let them cool slightly, then scoop out the flesh into a bowl.
- Make the Crust: Mash the sweetpotato flesh until smooth, then mix in the oat flour until a dough forms. Press into a round crust shape on a parchment-lined baking sheet. Bake for 15–20 minutes, or until firm and slightly golden.
- Assemble the Pizzas: Spread pizza sauce over the crust, sprinkle with cheese, and top with pepperoni.
- Final Bake: Return to the oven and bake for another 5–7 minutes, until the cheese is melted and bubbly
- Let cool slightly before serving.
