
Roasted Sweetpotato Harvest Salad

- 1 large NC sweetpotato peeled and chopped
- 1 tsp salt divided
- 1 tsp black pepper divided
- ¼ tsp garlic powder
- ⅔ cup olive oil divided
- ½ tbsp apple cider vinegar
- 1 ½ tbsp maple syrup
- ¼ cup orange juice
- 1 tsp fresh orange zest
- 8 cups fresh salad greens
- ½ red onion sliced thin
- 1 tart red apple chopped
- ¼ cup dried cranberries
- ⅓ cup blue cheese crumbles

- In a bowl toss sweetpotatoes with 2 tbsp oil, cinnamon, ½ tsp salt, ½ tsp pepper, and ¼ tsp garlic powder. Roast the sweetpotatoes in the oven at 400F for 20 minutes.
- While sweetpotatoes cook, prepare the other salad ingredients and dressing. For the dressing, whisk together olive oil, apple cider vinegar, maple syrup, orange juice, orange zest, salt, and pepper. Set aside.
- Remove sweetpotatoes from the oven. Place greens in a large bowl and top with sweetpotatoes, sliced red onion, dried cranberries, diced apples, and blue cheese. Serve with maple orange dressing on the side.
