Sweetpotato Sushi Cups

I’ve partnered with the North Carlina Sweetpotato Commission to create Sweetpotato Salmon Sushi Cups with Spicy Mayo!
Sweetpotatoes are a nutrient-dense food and taste delicious in sushi! One medium sweetpotato contains 100 calories and 4 g of fiber and an excellent source of vitamin A, fiber and potassium.
Makes: 2 dozen (24 sushi cups)

Ingredients
  

  • 2 cups cooked sushi rice
  • 6 nori sheets cut into 4 squares to make 24 squares
  • 2 cups salmon cubed
  • 2 cups North Carolina sweetpotatoes cubed
  • 2 tbsp rice vinegar
  • 1 large avocado diced
  • ½ cup avocado oil-based mayo
  • ¼ cup sriracha sauce
  • 1 lime juiced 

Instructions
 

  • Preheat oven to 400 degrees F and line 12-muffin tin with nori sheets. 
  • In a large mixing bowl, mix together salmon, sweetpotatoes and rice vinegar until well mixed.
  • Fill each muffin tin with 1 nori sheet.
  • Add 1 tbsp cooked rice to each muffin tin and press rice down with back of spoon.
  • Add 2 tbsp of sweetpotato salmon mixture to each tin.
  • Bake for 25 minutes, until sweetpotato is fully cooked, and soft when pricked with a fork.  
  • Garnish each sushi cup with avocado and drizzle with sriracha mayo, if desired.
