
Sweetpotato Sushi Cups
Recipe created by Roxana Ehsani, M.S., RD, CSSD, LDNI’ve partnered with the North Carlina Sweetpotato Commission to create Sweetpotato Salmon Sushi Cups with Spicy Mayo! Sweetpotatoes are a nutrient-dense food and taste delicious in sushi! One medium sweetpotato contains 100 calories and 4 g of fiber and an excellent source of vitamin A, fiber and potassium. Makes: 2 dozen (24 sushi cups) Serving Size: 4 sushi cups
Recipe
Ingredients
- 2 cups cooked sushi rice
- 6 nori sheets cut into 4 squares to make 24 squares
- 2 cups salmon cubed
- 2 cups North Carolina sweetpotatoes cubed
- 2 tbsp rice vinegar
- 1 large avocado diced
- ½ cup avocado oil-based mayo
- ¼ cup sriracha sauce
- 1 lime juiced
Instructions
- Preheat oven to 400 degrees F and line 12-muffin tin with nori sheets.
- In a large mixing bowl, mix together salmon, sweetpotatoes and rice vinegar until well mixed.
- Fill each muffin tin with 1 nori sheet.
- Add 1 tbsp cooked rice to each muffin tin and press rice down with back of spoon.
- Add 2 tbsp of sweetpotato salmon mixture to each tin.
- Bake for 25 minutes, until sweetpotato is fully cooked, and soft when pricked with a fork.
- Garnish each sushi cup with avocado and drizzle with sriracha mayo, if desired.
