Ingredients
  

  • 1 medium sweetpotato
  • 1/2 tablespoon olive oil
  • 1 cup 2% plain Greek yogurt
  • 1-2 scoops protein powder 30g protein, chocolate or vanilla flavor
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon maple syrup
  • Pinch of sea salt
  • 1/2 cup milk or unsweetened soymilk

Instructions
 

  • Preheat oven to 400F.
  • Prep sweetpotato: Wash the sweetpotato and cut it in half lengthwise. Brush it with olive oil and then place it flesh-side down on a baking sheet. Bake for ~30 minutes, or until the sweetpotato is tender and golden. Let it cool.
  • Blend: In a blender, add 1 cup baked sweetpotato flesh (no skin), Greek yogurt, protein powder, cocoa powder, maple syrup, salt, and milk, blend until smooth.
  • Serve: Split mixture into 2 containers and refrigerate for up to 4 days.
  • FUDGESICLE OPTION: Spoon mixture into popsicle molds and freeze into a refreshing treat! Makes about 4 fudge pops.
