Sweetpotato Loaf with Chocolate Ganache

Ingredients
  

For the Loaf

  • 1/3 cup milk
  • 1 cup mashed cooked sweetpotatoes
  • 3/4 cup canola oil
  • 2 large eggs
  • 1 1/2 cups white sugar
  • 2 cups all-purpose flour
  • 1 1/2 tsps baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

For the Ganache

  • 1/2 cup semisweet chocolate chips
  • 1/2 cup heavy cream

Instructions
 

For the Loaf

  • Preheat oven to 350F.
  • In a large bowl, blend the milk, sweetpotatoes, and canola oil. Blend in the eggs.
  • In a separate bowl, combine the sugar, flour, baking powder, cinnamon, nutmeg and salt.Pour the dry ingredients into the wet ingredients and blend until smooth.
  • Pour the batter into a greased loaf pan. Bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.
  • Let cool in a wire rack completely.

For the Ganache

  • Bring the heavy cream to a simmer in a small pot.
  • Immediately remove the heavy cream from the heat and pour it into a glass bowl along with the chocolate chips.
  • Let the milk and chocolate chips sit for 3-4 minutes. Then stir until smooth and creamy. Pour the ganache over the cooled sweetpotato loaf.
