Ingredients
- 3 small sweetpotatoes
- ½ cup cottage cheese
- 2 cups pasta sauce
- 4 sausages (chicken, turkey, or pork)
- 8 oz fusilli pasta
- Salt and pepper to taste
- Optional toppings: Fresh basil, Grated Parmesan cheese
Instructions
- Roast the sweetpotatoes: Preheat oven to 400°F. Place sweetpotatoes on a lined baking sheet and pierce with a fork a few times. Bake for 45 minutes, or until very tender. Let cool slightly.
- Blend the sauce: Scoop the flesh from the sweetpotatoes and transfer to a blender. Add the pasta sauce and cottage cheese. Blend until smooth and creamy.
- Cook the pasta: Cook pasta according to package instructions. Drain and set aside.
- Brown the sausage: In a large skillet over medium-high heat, sauté the sausage until fully cooked and lightly browned. Season with salt and pepper.
- Combine: Add the cooked pasta and sweetpotato sauce to the skillet. Stir until evenly coated and warmed through.
- Serve: Top with fresh basil and grated Parmesan if desired.
