Sweetpotato Black Bean Fudge Brownies

They’re gluten free, flourless, and made using black beans, sweetpotatoes, and other ingredients centered around maintaining a balanced and nutritious lifestyle, like cinnamon, coconut sugar, maple syrup. Ingredients
  

  • 2 15.5 ounce cans black beans, double rinsed and strained
  • 2 medium sweetpotatoes about 2 cups, peeled
  • 1 cup cacao powder
  • 1 cup coconut sugar
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 6 eggs
  • 2/3 cup coconut oil, melted
  • 1 tbsp vanilla extract
  • 2 (3.5 ounce) dark chocolate bar, roughly chopped
  • Flaky salt for topping (optional)

Instructions
 

  • Preheat oven to 325F degrees. Line a standard 12-count muffin or cupcake pan with cupcake liners, or alternatively, coat a 9 x 9-inch baking dish with coconut oil spray.
  • Poke sweetpotatoes a few times with a fork. Place in a microwave safe dish. Microwave 8 minutes, flipping sweetpotatoes halfway through.
  • Add strained beans, cooked sweetpotato, cacao powder, coconut sugar, cinnamon, baking powder, eggs, coconut oil, and vanilla extract to a blender or food processor. Pulse a few times to combine. Blend on medium speed until smooth batter forms, scraping the sides of the bowl as needed. Once the batter forms, transfer to a separate bowl. Use a spatula to fold in dark chocolate chunks.
  • Coat an ice cream scoop with coconut oil spray. Use scoop to divide batter evenly into lined pan. If using a baking dish, coat with cooking spray and spread batter evenly into dish. Bake 25-30 minutes, until a toothpick is inserted and clean when removed.
  • Remove brownies from oven. Immediately sprinkle with flaky salt if desired. Cool at least 10 minutes before serving. If a baking dish was used, cool completely before slicing.
