Ingredients
  

  • 1 sweetpotato chunked
  • 3 tbsp olive oil
  • ¼ tsp salt
  • 1 tsp red pepper flakes
  • ½ cup fresh parsley
  • 1 tsp lemon juice

Instructions
 

  • Preheat Oven to 425 F. Add sweetpotato chunks to a pan. Drizzle 2 tbsp of olive oil on the sweetpotatoes. Sprinkle ¼ tsp of salt. Roast in the oven for 25 minutes. In a skillet over medium heat, add 1 tbsp of olive oil. Add minced garlic, 1 tsp of red pepper flakes, ½ cup of fresh parsley. Saute it for 2 minutes. Top the sweetpotatoes with the garlic herb mixture. Garnish with fresh parsley. Add lemon juice.
